The SPA VILNIUS restaurant has been renewed quietly – slowly, from within. The direction has deepened, the taste grown bolder, and we’ve rooted ourselves even more firmly in the place where everything begins – the forest of Anykščiai.

The menu here is a walk through the layers of the forest. Some dishes are as light as a dewdrop on a berry. Others are deep and rich, like the scent of earth after rain. We use what’s alive – juniper, dill and basil oils, hazelnuts, wood sorrel, forest mushrooms, wild greens, and fermented vegetables.

Most important is the taste – a quiet invitation to explore, to feel, to discover. Like the breath of the forest – unexplainable, yet familiar.

Each dish is a small discovery. Sometimes a childhood memory, sometimes something new, unexpected, but somehow still your own.

Organic garden

SPA VILNIUS places great emphasis on sanitas per cibus - health through food. That's why we take special care to ensure that our dishes are made from seasonal, fresh and easily accessible produce.

And what could be more accessible than a collective garden on the territory of SPA VILNIUS, where the produce reaches your table with the highest nutritional value and taste. The open-air, ornamental-style kitchen garden is an innovative project of our gardener and kitchen team, ensuring the highest quality and ecological friendliness of seasonal products. The restaurant's organic kitchen garden is home to a myriad of herbs, a wide variety of greens and salads, and even vegetables - the kitchen team is looking forward to this year's harvest of courgettes, pumpkins, carrots, cucumbers and other vegetables.

Herbs, lettuces, radishes and lettuce have sprung up in the greenhouse next door, and various types of tomatoes will start to turn red as the summer heat arrives.

The garden-like composition is also adorned with berry bushes and fruit trees that will blossom in the summer: strawberries, rosehips, apple trees, pears, plums, cherries, cherries and currants. All this floral diversity will not only delight the eye with its colours and enticing scents, but will also, to everyone's delight, add even more personality and subtle flavours to already unusual and delicious dishes.
